Description
Douglas fir comes from a fantastic tree found in the wild in a number of special locations around the UK.
The needles and sap provide us with a flavour of citrus and clementine.
These are perfect boiled and blended into a syrup for ice cream, sorbets and lollies or a sauce to accompany fish.
The needled branches can also be used for smoking foods on open fires or placed under meats, fish and vegetables during baking and steaming.
