Spruce is a conifer that gives us subtle sweet and citrusy flavours.
We can use it for flavouring syrups, sorbets, salt, sugar as well as using it to smoke ingredients. The needles can be eaten raw when young and the older shoots on stalk work brilliantly in infusions. Our favourite way to use spruce if to use it in a fish stock.
Traditionally spruce has been used to promote mental health and to aid and help prevent stomach inflammation.
