Winter Chanterelle’s provide us with a fantastic deep mushroom and earthy flavour as well as a robust texture for frying, boiling and pickling.

Winter Chanterelle is the late equivalent of girolle or golden chanterelle. They can width-stand certain amounts of frost meaning we can get them slightly deeper into winter. They are harvested in numerous different locations throughout Scotland depending on the season.
